HI all,
So I had a late night last night!!! I was teaching a meditation class till 8:45pm so you can imagine what time I got home at. Anyway, I was hungry........what to do...I do not want to be unhealthy and knock back fatty cheese and crackers with a glass of wine. I need a good protein dinner.....
I went to my freezer and saw what my options were....Chicken thigh's...4 of them (I buy them in packs of 12 and then before I but them in the freezer I put them in zip lock bags in groups of 4...makes it easier to defrost in nights such as this one) . I but them in a bowl of really hot water and they take about 10 min.
Simply cut them in strips and then in half.
Get a frying pan, little bit of olive oil and throw the chicken in to cook.
In my cupboard I always keep on hand ready to go Indian food packs...you can get them in SOOO many different flavors and food base. I try to keep a lentil, potato and rice one on tap at all times....WHY?
Lentil...makes for a good dip
Potato....side dish
Rice ...Stir fry
(FYI...you open the pack and all you do is poor it in a dish and eat...you can heat it up if you like but it is ready to eat)
So in this case..you guest it...stir fry
Back to the chicken in the frying pan...add 3 garlic cloves minced and 1 table spoon of tumerac
When chicken is cooked added rice mixture
Heat for 2 minutes and serve.
I was done in 15 min...and that was not rushing at all.
I have to say it was so tasty and I will have to make it again... I know I say this knowing I normally never make the same thing twice.

My Ever So Popular SMASHED Potato's
Hi All,
I hope you all had a great long weekend. I had some great friends over for a dinner party on the Sunday night and one of my side dishes was my ever so famous SMASHED potatoes. They are a great dish to do, no mess and not a lot of work, but ever so tasty.
All you do is get medium size potatoes, 1 or 2 each for the amount of people that you are cooking for.
Boil them till they are nice and soft, you can do this earlier on, even that afternoon if you want.
When ready to crisp up potatoes pre-heat oven @ 400 degrees.
In a small bowl I get my seasoning ready, I start with olive oil and add garlic, chili sauce if you like spice, Italian seasoning is good if you prefer. Mix it together with a brush and set aside.
Get a cookie sheet ready.
I take them out one at a time on a cutting board and with a bottom of a bowl or large cup I SMASH the potato gently so it is about 3/4 to 1" thick if you do it any thinner they will fall apart. Brush seasoning on the one side, put that side down on the cookie sheet and brush other side. Do this to all potatoes.
Place potatoes in oven about 5 to 10 minutes a side, depending how crispy you like it.
And enjoy!!!!! Goes well with stake and chicken!!

Up North...Easy Bree
HI All,
I was up north this weekend at a really good friends of mine cottage and we all went to a BBQ at a cottage a few doors down the road. I do not like to show up to someones house or cottage empty handed. Here is the easiest Bree in the world to make in a flash. Great for if you have surprise company, or you are short on time.
I found this Olive chipotle Bree topper in the place where I bottle my wine here in Burlington. www.exquisitetasteinwine.com There are so many Bree toppers out there but I have to say, I did not know anyone at the BBQ and by the end everyone knew who I was because of the Bree. The Bree baker I brought it over in looked like it was licked clean.
All you do is go to your local grocery store and pick up a Bree and grab a Bree topper.
1. Bake Bree for 20 min @ 350
2. poor Bree topper on Bree
AND YOU ARE DONE......just serve with crackers.
It is very good with rice crackers...but I am bias because I can only eat the gluten free crackers. Enjoy!!!!!

LASY BURGER DINNER
I got home late and still had to put the laundry in and the garbage/recycling out. Of course poor myself a glass of wine first to get my energy level up to do all this and cook dinner....lol. I grabbed the first think that looked like meat out of the freezer and put it in hot water to defrost. Started on the garbage....I have to say I hate the duty of throwing out the pooh bags.......I am glad it it once every other week.....sigh
I was going good, planing in my head what was going to be fore dinner and the laundry was in the recycling was out and I was about to go in and start to cook.....I turn around and there is the new neighbor........and of course you have to say hi and find out all the details of them and who the new people are that just moved in beside you. And that set me back for time for making dinner.
I finally get away from the neighbor gossip and I start dinner, at this point I am a glass of wine into the night and I don't really feel like cooking. But in order to eat you have to cook......
I grab 2 bowls and start cutting up 1/2 an onion, put 1/2 in one bowl and the other 1/2 in the other bowl
I go over to the sink and see what meet I picked out....it was ground turkey...I through that into one of the bowls, added my favorite seasoning (chili peppers and garlic) mixed it all together made pattys and put it in a frying pan to cook on medium heat.
I go back to the fridge....no lettuce...but there is cucumbers......I cut them up and but them in the other bowl with the onions, I add tomatoes and graded carrots (you can buy them graded....much easier).....and there is your salad.
Flip burger patty's when you can see that they are half cooked and turning white. Sip wine and wait for other side to cook...you can set the table or make it look like you are working hard and ask someone else to do it.
When the other side is cooked you can serve with cheese, it is not necessary to have a bun, it is personal preference and you may not even have them...lol
and that was my night..........stay tuned for more recipes and quick ideas when you are to lazy to stop off at the grocery store on the way home
